Two-time Figure Olympia champion Erin Stern shares more than just her fitness tips. In a recent YouTube video, Stern revealed her recipe for healthier chicken nuggets.

Throughout Erin Stern’s career, she has proven there is little she can’t do. From earning the Figure Olympia title twice to nailing down a first-place finish in the Bikini division at the 2022 Republic of Texas Pro, she has dominated the sport of bodybuilding.
Off the stage, Erin Stern shares her knowledge on training with her fans through social media, where she has amassed well over 300,000 followers. From strengthening the glutes to superset workouts for a smaller waist, there isn’t a body part that Erin Stern doesn’t know how to get in shape.

Erin Stern Shares Her Healthy Chicken Nugget Recipe

Recipe:
- Baked Chicken Nuggets
- Yield 4 Servings
- Serving Size 5 Chicken Nuggets
- Prep Time 15 Minutes
- Cook Time 20 Minutes”
INGREDIENTS
- 1½ cups almond flour
- 1lb (454g) ground chicken breast
- 1 large egg, beaten
- 2 tsp Italian seasoning
- 1 tsp garlic powder
- ½ tsp smoked paprika
- 1 tsp kosher salt
- 1/2 tsp black pepper”
DIRECTIONS
- Preheat the oven to 375°F (190°C). Place the almond flour in a large shallow dish.
- In a large bowl, combine the ground chicken, egg, Italian seasoning, garlic powder, smoked paprika, salt, and black pepper. Mix well to combine.
- Shape the mixture into 20 nuggets and then coat on all sides with the almond flour. Transfer the nuggets to a sheet pan and spray with a light coating of cooking spray.
- Bake for 15 to 20 minutes or until the chicken reaches an internal temperature of 165°F (75°C)
Erin Stern shares all the ways to utilize these healthy chicken nuggets to add some variety to your meal plan.
“This recipe is sure to satisfy those craving for crunchy, crispy chicken nuggets and it’s so versatile. So make a big batch of these. You can pair them with rice and veggies or you can put them in a wrap or have them in a sandwich” Stern explains.
Stern explains that usually craving fast food is more about wanting something different rather than the high-calorie meal itself.
“Eating clean can get boring, that’s why I think it’s important to, not necessarily stray away from your meal plan, but to prepare foods differently than you normally do, giving you that different view on your plate. Fast foods I think are not so much about craving the calories but craving that variety.”
She believes you can create that variety in your own home, making your diet feel easier to stick to and more enjoyable.
“So if you can create that variety in your own kitchen with foods that you’re already eating then you’ll be able to stick to the plan and have fun doing it.”
Stern finishes by emphasizing just how easy it is to make these delicious healthy chicken nuggets.
“Here we have it. Our chicken nuggets. Just eight simple ingredients that you probably already have in your pantry. In less than 30 minutes you can have a complete meal and keep in mind these are so versatile.”
Going over all the ways these nuggets can be enjoyed, Stern shares that her favorite is to have them with Greek yogurt and hot sauce.
“So you can put them in a rice bowl, in a wrap, you can just put them in a tupperware to go. I like to mix them with some greek yogurt and some hot sauce, have a little dipping sauce. Use your imagination. The sky is the limit.”
Erin Stern takes nutrition seriously. In addition to sharing her healthy recipes in her new cookbook, Stern has previously discussed her eating practices for toning the body. Erin Stern explains that while eating in a calorie deficit is great for losing weight, it is better to eat at maintenance calories when toning the body.
“Another training principle or eating principle which is something that I’ve really followed for the last number of years without knowing the name of it and it’s called g-flux. I want you to think about increasing your overall work capacity and slowly increasing your caloric intake over time.”
Erin Stern has had years to master her training and diet practices. Thankfully, she continues to share that knowledge with her fans, ensuring that even when on a diet, we all can still enjoy some classic chicken nuggets.
