This is a very simple healthy and tasty recipe 🙂
Chopped:
- Lemon Grilled Chicken (4 breasts)
- Gala Apples (2)
- Celery (1/2-1 cup)
- Green Grapes (1/2 cup)
- Optional, chopped nuts such as almonds
- Optional: Diced red onion .
Dressing:
- 2 large avocados, flesh removed
- 1 nub of ginger root (1/2″ – 1″ piece)
- 1 shallot
- 6 Tbsp fresh lemon juice
- 2 Tbsps apple cider vinegar
- 1 Tbsp pure maple syrup
- 2 Tbsp extra virgin olive oil
- 3 Tbsp chopped fresh basil
- Pinch of sea salt {Pulse dressing in blender until creamy}
- Mix dressing with Chicken Salad ingredients, and fill lettuce leaves.
