Lemon Chicken Apple Salad Plus Avocado Dressing

This is a very simple healthy and tasty recipe 🙂

Chopped:

  • Lemon Grilled Chicken (4 breasts)
  • Gala Apples (2)
  • Celery (1/2-1 cup)
  • Green Grapes (1/2 cup)
  • Optional, chopped nuts such as almonds
  • Optional: Diced red onion .

Dressing:

  • 2 large avocados, flesh removed
  • 1 nub of ginger root (1/2″ – 1″ piece)
  • 1 shallot
  • 6 Tbsp fresh lemon juice
  • 2 Tbsps apple cider vinegar
  • 1 Tbsp pure maple syrup
  • 2 Tbsp extra virgin olive oil
  • 3 Tbsp chopped fresh basil
  • Pinch of sea salt {Pulse dressing in blender until creamy}
  • Mix dressing with Chicken Salad ingredients, and fill lettuce leaves.
